Piña Colada Smoothie
We concocted this on a cold February morning, wishing for palm trees and sunshine. The full-fat coconut cuts the tartness of our Plain Cream On Top and add a nice dose of MCFA (medium chain fatty acids) as well. We used frozen pineapple, but frozen mango or banana would work well too. Rum is optional!
1 cup chilled organic full-fat coconut milk
1 cup Maple Hill Plain Cream On Top Yogurt
1 cup frozen pineapple
Toasted coconut chips (we LOVE Dang’s)
Blend the first three ingredients together until smooth. Pour into two 8 oz glasses, top with toasted coconut, dream of beaches, and enjoy.
